Ultra Fudgy, Healthy Brownies (Made with Garbanzo Beans)

I bet you would never have guessed that a great brownie recipe begins like this…


But alas, these garbanzo bean brownies are amazing. There’s seriously no reason to buy the box mix ever again. If you don’t tell your family these are healthy (and dairy free! and gluten free!), they would have no idea.



Just because I’m trying to lose baby weight doesn’t mean my cravings just go away, and at the end of a day spent with a toddler and newborn, just a little bit of chocolate is very necessary. So this recipe made with ingredients I already have in my pantry has been a lifesaver this week!

I know it sounds weird to use garbanzo beans as the base, but they are way more versatile than you think, and they are packed with protein. I promise that these brownies will taste nothing like garbanzo beans when all’s said and done!

So drain and rinse the garbanzo beans that have probably been sitting in your pantry for months, and throw them into a good blender or food processor. Add your nut butter, sweetener (maple syrup or honey), coconut oil, coffee, and vanilla and blend for a few minutes until you have a smooth mixture.


Transfer the contents of the blender into a mixing bowl and add the oat flour, baking soda, baking powder, and salt. Whisk until well combined. The batter will be thick and that’s good! Remember that you don’t need to go out and buy expensive oat flour from the store- just blend oatmeal in a blender or food processor until finely ground.

Lasly, fold the dark chocolate chips into the batter. Use a spatula to spread the batter until a well greased 8×8 inch baking pan and spread from edge to edge. Sprinkle the remaining chocolate chips over the top.


Bake in a 350 degree oven for 20-22 minutes. These things are fudgy and rich and packed with protein- perfect for a midweek treat for anyone in the family. They are toddler approved and husband approved, which means I have to hide a few in the back of the fridge for me 🙂



Healthy Garbanzo Bean Brownies

1 15 oz can garbanzo beans
1/2 cup natural peanut butter or almond butter
1/2 cup real maple syrup or honey
1/4 cup oat flour (just oatmeal finely ground in blender or food processor)
1/4 cup cocoa powder
1 tbsp coconut oil, melted
2 tbsp strong coffee or espresso
1 tsp vanilla
1/4 tsp baking soda
1/4 tsp baking powder
1/8 tsp salt
3/4 cup dark chocolate chips (70%+ cacao)

1. Drain and rinse garbanzo beans, then put into blender or food processor with peanut butter, maple syrup (or honey), melted coconut oil, vanilla, and coffee. Blend for a couple of minutes on high until very smooth.
2. Transfer contents of blender or food processor to a mixing bowl. Add oat flour, cocoa powder, baking soda, baking powder, and salt. Using whisk, mix until well combined.
3. Use spatula to fold in chocolate chips, leaving a few to sprinkle over the top.
4. Spoon batter into a greased 8×8 baking pan. Spread evenly throughout pan using spatula, and sprinkle remaining chocolate chips over the top.
5. Bake at 350 degrees for 20-22 minutes. Allow to cool before enjoying.
